Introduction to Baking

  • This program option is a great addition to our other program offerings; introducing the basic techniques of baking, developed to feature local, seasonal products.   
  • You will have the ability to learn how you can supplement your income by creating and selling desserts from home.                                                 
  • We will cap enrollment in this program at 10 students and will only begin with a minimum of 6 students enrolled in the program.                    
  • This program will run on Saturdays only from 9 am to 2 pm for a period of 10 weeks.         

  • Total Program Cost, including all materials and fees, is: $950                                                                                            
  • If school is closed due to inclement weather on the Friday prior to class, class will be canceled for the Saturday following the closure.  Time will be added at the end of the program for any missed days.

Program Breakdown

Introduction to Pastry Arts- 10 Hours

An Introduction to the basic principles of pastry arts and bake shop equipment.  Students will learn proper measurement techniques, scaling, cooking temperatures and functions of all equipment.

 

Cookies and Brownies- 10 Hours

Students will prepare and bake according to recipes a variety of cookie dough and batters.  Students will learn the difference between shaped, fill, bar and holiday cookies.  Students will also learn how to properly present and decorate.

 

Quick Breads and Yeast Breads- 10 Hours

Students will prepare and bake according to recipes a variety of both unleavened and yeast dough’s.  Students will learn the importance of using the proper flour to achieve desired texture for finished product.  Students will make muffins, sweet breads, focaccia, pizza dough and white bread.

 

Cakes and Frostings- 10 Hours

Students will prepare and bake according to recipes a variety of cakes and cheesecakes, as well as complimentary frosting.  Student will learn basic finishing and decorating techniques.

 

Plated Desserts- 10 Hours

Students will prepare and bake according to recipes a variety of custard, mousses, tortes, chocolates, and dessert sauces.  Plate presentation will be the primary focus as students learn the importance of “eating with your eyes”.
